JAMMU and Kashmir (J&K) is known for its mouth-watering delicacies, and when it comes to non-vegetarian food, there is no match to the traditional dishes of the erstwhile state. The traditional Wazwan is the epitome of Kashmiri cuisines.
A lesser-known fact about the source of these authentic dishes is the place where meat comes from to J&K. A large amount of meat and livestock are supplied from Haryana to J&K. Not just J&K, Haryana supplies meat and livestock to the Ladakh region as well.
The average yearly consumption of meat in J&K including Ladakh is more than 50 million kilograms. The majority of Kashmiris prefer mutton over chicken, and when it comes to mutton, the demand for lamb meat is always high in J&K. Haryana produces nearly 400 thousand metric tons of poultry meat every year. The availability of live stocks in abundance has proven to be a major booster for Haryana’s supply chain of meat.
Ambala district of Haryana is one of the biggest suppliers of livestock and meat to J&K and Ladakh. The district supplies more than 60% of the total supplies to the region. Apart from Ambala, Shahbad division of Kurukshetra district of northern Haryana also supplies a huge quantity of meat to J&K and Ladakh.
Haryana caters to a good number of varieties of livestock, thus creating a diverse market of livestock in the Jammu region, Kashmir and Ladakh as well. Ankit Titoria, a meat dealer based in Karnal district of Haryana says a large number of consignments in trucks are sent to J&K and Ladakh every week. “Every Tuesday a meat mandi is set up in Ambala, and most of the consignments are sent from there only to cold places such as Himachal Pradesh, Uttarakhand, J&K, and Ladakh,” adds Titoria. “Mostly,” Titoria says, “sheep meat is sent to J&K.”
